if you wish you can sear your meat before putting in the crock pot, but you don't have too. season with salt and pepper. you can add beef or chicken broth instead of water. i would say a cup to a cup and a half would be fine...you could add some onions, celery if you wish as well to flavor your gravy you will have when it is done...cook on low, 8-10 hours...nummy
