Grilling with wood chips in a charcoal grill?

do i have to use a foil pouch when using soaked wood chips? how do you truly grill steaks with maple wood chips in a charcoal grill? i really need help here! please!! this is my first time grilling with a charcoal grill. and only used a propane one once so i'm experimenting.
